“Les Georges” is produced entirely from the free-run juice of the younger vines of Cabernet Franc, and is vinified and aged in steel tank. This cuvée comes primarily from “Les Plantes,” the thirteen hectares of Cabernet Franc immediately behind (to the west of) “Le Clos” which Sébastien’s father planted between 1978 and 1988. Far from a simple gulper, however, “Les Georges” is classic Chinon in its marriage of vibrant fruit, honest tannins, and refreshing earth-mineral interplay.

André Bonneau and his wife created Domaine la Bonnelière in the town of Varrains, the heart of the Saumur-Champigny appellation, in 1972 with just a few hectares of vines. Today, their children Anthony and Cédric represent the 5th generation of the family. They have increased the size of the domaine to 40 hectares of prime vineyards and gained international acclaim for their wines. The Bonneaus are vigorous proponents of biodiversity in their vineyards and plant grass between all the rows. No herbicides and chemical products are used. The Saumur-Champigny Tradition is a selection of very ripe and healthy fruit from 20-year-old vines across the domaine’s holdings on southwest facing slopes. 100% Cabernet Franc

2016 DOMAINE PASCAL BELLIER CHEVERNY $18

80% Pinot Noir, 20% Gamay

The vines average age is 20 years old and are planted on 10ha of siliceous clay and limestone soils. Harvested in mid-September with a maceration period of 15 days followed by fermentation in stainless steel lasting 15 days. Aged for 3-4 months in stainless steel tank and filtered. Certified Sustainable.

2014 DOMAINE PHILIPPE GILBERT MENETOU SALON $29

Hand-harvested Pinot Noir undergoes a maceration of three weeks at which point it is racked into conical-shaped barrels to pass its malolactic fermentation and spend eighteen months in elevage on the fine lees before bottling. 100% Pinot Noir with the average age of the vine 35 years.

2017 La Berriere MUSCADET "Sur-Lie" Cotes de Grandlieu" $12

2016 Chateau de la Moriniere Muscadet $15

Chateau La Morinière was bought in 1979 by 3 brothers, Bernard, Michel and Francois Couillaud. They run the 40 hectares vineyard averaging 30 years of age. Whereas most Muscadets are left on the lees only a short time, all of the Morinière wines are bottled "sur lie." The wines are not racked after fermentation, but are drawn directly off the lees and bottled immediately, leaving a small amount of carbon dioxide that was created during fermentation. The wines are bottled no earlier than April to allow sufficient time for the lees to develop character in the wine.

The Monmosseau family have been cultivating Vouvray for two centuries. Soft and creamy with green apple aromas, toasted nutty notes and a rich honey texture, this wine is deep and sophisticated. It is balanced with brisk acidity and a clean refreshing finish.

The grapes, 100% Chenin Blanc, are sourced from the vineyard site “Les Rangs de Longue” which is on the northern part of the estate but with south-southeastern exposure. The soil is a mix of clay and sand and limestone with some schist. The wine is vinified totally dry in cuve and aged on the fine lies for eight to nine months before being bottled. Absolutely brilliant Chenin Blanc.

2015 MARC DESCHAMPS POUILLY FUME "PORCHERONNES" $27

This cuvée is a blend of wine from several sites scattered on the hilltop of Les Loges, specifically “La Cote”, and “Les Griottes”. These are some of the younger vines of the estate, now (2012) averaging 20 years of age. This is the most elegant and sprightly of the quartet of Pouilly Fumés produced by Deschamps.
